A fine champagne that displays a pale gold in color with amber reflections and extremely fine bubbles showing great clarity. Scents of gentle toasty woodiness, candied citrus, minerality and fresh zest, are followed by a pure, taught vibrancy on the palate and a long resonant finish.
Delicious with seared scallops on a bed of artichokes sautéed in sea salt butter, 7-hour roast leg of lamb, Apple and raspberry compote with pink biscuit crumble. Other shellfish, crab, or lobster will work too!
